  • Oat Milk
  • Bananas
  • Pepitas
  • Eggs, Egg Whites
  • Maple Syrup
  • Vanilla Extract
  • Baking Powder
  • Sea Salt
  • 18oz. Fresh Blueberries

Ingredients

  • 4 cups Old Fashioned Oats
  • 1½ cups Oat Milk
  • 2 Medium Bananas, Ripe
  • 1/2 cup Pepitas
  • 1 large Egg, ¾ cup Egg Whites
  • ½ cup Maple Syrup
  • 1½ tablespoons Vanilla Extract
  • 1 teaspoon Baking Powder
  • ½ teaspoon Sea Salt
  • 18oz. Fresh Blueberries
  • Coconut Oil

Directions

  1. Peel the bananas and mash them with a fork in a large bowl until no longer lumpy.
  2. Add the oats, milk, pepitas, eggs & egg whites, maple syrup, vanilla, baking powder, and salt to the bowl. Mix well with a spatula.
  3. Fold in the blueberries gently.
  4. Lightly grease a large rectangular baking dish with coconut oil. Spread the oat mixture in the dish, evenly distributed.
  5. Cover the baking dish and chill in the refrigerator overnight.
  6. The next morning, remove the dish from the fridge. Preheat the oven to 350°F. Bake until set and golden on top, about 40-45 minutes.
  7. Rest for 5 minutes, then either slice and serve warm or refrigerate for later!
