Ingredients
- 4 cups Old Fashioned Oats
- 1½ cups Oat Milk
- 2 Medium Bananas, Ripe
- 1/2 cup Pepitas
- 1 large Egg, ¾ cup Egg Whites
- ½ cup Maple Syrup
- 1½ tablespoons Vanilla Extract
- 1 teaspoon Baking Powder
- ½ teaspoon Sea Salt
- 18oz. Fresh Blueberries
- Coconut Oil
Directions
- Peel the bananas and mash them with a fork in a large bowl until no longer lumpy.
- Add the oats, milk, pepitas, eggs & egg whites, maple syrup, vanilla, baking powder, and salt to the bowl. Mix well with a spatula.
- Fold in the blueberries gently.
- Lightly grease a large rectangular baking dish with coconut oil. Spread the oat mixture in the dish, evenly distributed.
- Cover the baking dish and chill in the refrigerator overnight.
- The next morning, remove the dish from the fridge. Preheat the oven to 350°F. Bake until set and golden on top, about 40-45 minutes.
- Rest for 5 minutes, then either slice and serve warm or refrigerate for later!
